Smoked Chicken Fajita mix. https://festivalfoods.net/blog/2024/05/30/smoked-chicken-fajitas/. Tried the recipe, double size 9 people. Chicken took the full 3 hours at 215 plus. Had to get up to 275 at end to get chicken hot enough. All shredded well, all white, then did another hour with veggies. Good flavors, but not sure if was worth the wait. When chicken is nearly done, guest start getting hungry, can smell it, then I say...just one more hour. It becomes not worth it. Took a lot of fuel for the return as well. Will I do again, probably not. Was it good, yes. Might be a good solution for a large party. I could probably cook for 20 with the same effort.

Forgot to logit, but smoked Sausage and Burgers for Labor day. Smoked
sausage for 45 minutes, flipped, and then smoked the burgers for close
to an hour with the sausage. Finished grilling burgers on firebox grill. Food was great, not too smoky.
I
used drip bucket of coal to start then two sticks then another drip
bucket of coal and then just maintained criss cross sticks. After warmed
up intake flue closed most of the time. No smoke...loose intake.

So today I answered my own question is it worth it to spend a couple of hours smoking brats. The answer is certainly yes.

1 hour 45 minutes flipped half way through brats. Flavor is insane.

Tried using firebox to heat up main chamber to use as a pizza oven last night. No luck, using charcoal and wood. Fire got too hot in box, and only reached 390-400 in chamber.
